The Raffles Grand Hotel d’Angkor has appointed Memo Hernandez as Executive Chef, overseeing the 94-year-old hotel’s culinary program, including a temple dinner at the Angkor archaeological park.
Chef Memo, who was born in Costa Rica, brings more than two decades of culinary and luxury hospitality experience from locations around the world. His most recent role was in the Bahamas, following previous positions in Kosovo, Vietnam, Tanzania, the Maldives, Fiji, and Dubai.
At Raffles Grand Hotel d’Angkor, Chef Memo will lead the culinary teams at Cafe d’Angkor, an all-day brasserie serving Asian and international dishes; 1932, the hotel’s Khmer fine-dining restaurant; The Conservatory, home to Raffles Afternoon Tea; and the hotel’s banquet service.
